Gluten-free banana bread

So easy because you add everything to your blender!

Simple and yummy banana bread

3 bananas - super ripe

2 eggs

1 tsp of bicarb 

1 tsp of baking soda 

1 tsp salt 

1 tbsp of vanilla extract 

1/3 cup coconut sugar 

1/4 cup of maple syrup

1 cup of buckwheat flour

1/2 cup of almond meal

1/2 cup of coconut yogurt or any greek yogurt 

1/2 cup of butter 

Teaspoon of cinnamon

  1. Preheat oven to 180°C/350°F (160°C fan). Grease a loaf pan or line with baking paper

  2. Add all ingredients to a blender. Blend until smooth

  3. Pour into baking tin

  4. Bake 40 minutes – Pour into pan. Sprinkle over icing sugar. Bake 50 minutes. Cool 15 minutes in pan then carefully turn out onto cooling rack.

    *optional dust with icing sugar.
